One Square serves food all day, making it a perfect choice for pre‑theatre dining, with Usher Hall and The Lyceum Theatre right on our doorstep. It is also ideal for a relaxed lunch with friends or colleagues. The menu includes sharing platters, light bites and larger plates. You can also dine al fresco on our terrace, which offers stunning views of Edinburgh Castle.

Our new cocktail menu is inspired by The Four Corners of Scotland. Each drink captures the character of its corner, from crisp coastal notes to rich Highland warmth, blending heritage with modern creativity.

Pickering’s Gin Terrace

Partnering with Pickering's Gin, we have created a perfect summer sun trap, complete with some pretty amazing views. Our outdoor space, with stunning views of Edinburgh Castle features a stylish botanical theme, colour-pop artwork and an eye-catching flower wall.

The space also includes heaters, umbrellas and a canopy, making it the ideal al fresco hangout, even in the unpredictable Scottish weather.

One Square Gin

Starting with a traditional recipe, we got our heads together with our friends at Pickering's Gin and selected over 15 botanicals from across the world.

After all, Edinburgh, and in particular the port of Leith, has a long and rich history of global trade, so we thought it only right that this should be reflected in the end product.

The result is a truly globetrotting gin, hand-made with only the finest natural ingredients and distilled right here in Edinburgh at Summerhall. Mediterranean liquorice and orris root add a heady kick, while juniper and fragrant Scottish heather are harvested much closer to home. Notes of lemon, lime and anise are combined to create a citrusy, easy-drinking gin that refreshes and invigorates in equal measure.
